BREAKFAST TACO
A simple yet versatile breakfast you are sure to enjoy.
Ingredients:
Fresh eggs (we averaged 2 per person)
Fresh roma tomatoes diced
Mozzarella or cheddar shredded or both
Small corn tortillas
Salt & black Pepper
Fresh chopped green onions
Steps:
Crack your eggs in a bowl and whisk. Add the black pepper and chopped green onions. set aside
Heat up your pan and use whatever cooking fay of your choosing. We used avocado oil.
Then Cook the egg mixture first. Stirring slowly until you have some large pieces. Add black pepper. Once cooked set aside. Salt your eggs if desired after they are cooked.
Grab your diced Roma tomatoes and place them in the pan. Add some black pepper and salt to flavor. Cook them down enough until most of the tomato liquid is cooked away. If not this could make the taco soggy.
in the same pan grease once more and allow to heat up and then place the corn tortillas in and allow a couple of minutes to start crisping up.
Once that is ready place some egg, cheese and the cooked tomatoes onto half of the tortilla. Then fold the other half over. You might need to hold it down a bit until is forms.
Flip the taco over so both side cook evenly and the cheese starts to melt acting like a glue to keep the taco closed.
Once the cheese it melted its time to eat.
Add sour cream or hot sauce if desired. I recommend our Dill fire hot sauce.
