      <image:caption>Ingredients Broccoli florets mozzarella cheese olive oil Supplies: Baking sheet, parchment paper, Potato masher or fork. Instructions Break up the broccoli to two bite sizes and steam until tender. Then grab a large baking sheet lined with parchment. Now add a coin size amount of olive oil onto the parchment with space between each until the sheet looks like a domino. on top of the oil spots place the broccoli. with a potato masher or a fork crush the broccoli Sprinkle some mozzarella on top and place in oven at 375 c. Roughly about 10 minutes the cheese should be melted. Note that every oven is different. So cooking times may vary. Keep an eye on it and cook to your liking. Once done remove from the oven and let the cheese set and cool. Once the cheese semi firms it can be picked up by hand (without falling apart) and enjoyed.</image:caption>

We used our own Genovese basil and purple basil. We recommend leaving leaves whole for presentation. Sprinkle some kosher salt, and dried Italian oregano.       <image:caption>EGG SALAD INGRIEDIENTS Fresh farm eggs (Our recipe is based on 8 eggs) Mayo Kosher salt black Pepper DIRECTIONS Place eggs in a pot and bring water to a boil. Once the water boils remove from the pot from the heat and place lid and set aside 10 to 12 min. Remove from hot water , cool and peel and then chop up. At this point is where your personal preference comes in on how smooth or chunky your egg salad will be. Once the eggs are at the consistency you want add salt , freshly ground black pepper and roughly 1/2 of mayo. Basing the mayo amount on 8 eggs. Optional fresh chopped green onions set aside in fridge to cool Bread selection We used our homemade Crusty Italian bread. Used the end part but any part of the bread is fine. Should choose a bread that can hold up and good to dip. If not bread then a melba toast can work or your favorite crackers. Egg salad sandwich without the sandwich.       <image:title>Cooking with J &amp; A - PICKLED RED ONION FOCACCIA - INGREDIENTS 1 Jar of J &amp; A farms pickled red onions 5 tbsp olive oil 2 garlic gloves 1 1/2 tbsp Kosher salt 1 tbsp active dry yeast 1 cup milk 2 tsp sugar 6 cups all purpose flour TIME TO PUT IT TOGETHER Before using the J &amp; A Farms pickled red onions you must rinse the vinegar from them. Place in a small mesh strainer and let drain. Finely chop half of the jar of pickled onions in a large frying pan over medium-high heat, add 3 tbsp olive oil, the strained onions, garlic, and 1/2 tsp. salt. Cook, stirring occasionally, until onions are soft, about 3 minutes. Set aside. Meanwhile, in the bowl of a stand mixer, dissolve yeast in 1 cup warm water. Let sit until foamy, about 5 minutes. Attach dough hook and, with mixer on low, add milk, 1 tbsp. salt, the sugar, and onion mixture to yeast oil and all. Work in flour, 1 cup at a time, until you have a smooth and elastic dough, about 3 minutes. Transfer dough to a large, oiled bowl. Cover with a clean towel or plastic wrap and let sit until doubled in bulk, about 1 1/2 hours. Punch down, cover, and let sit until doubled in bulk again, about 1 hour. Oil a large rimmed baking sheet (ideally 12 in. by 16 in.). Punch down dough again, transfer it to baking sheet, and use your hands to spread and gently push it into an even layer. Cover and let sit until soft and puffy, about 45 minutes. Meanwhile, rinse remaining jar of pickled onions. In a large frying pan over medium-high heat, add remaining 2 tbsp. olive oil, the onions, and 1/2 tsp. salt. Cook, stirring, until onions are soft and beginning to turn translucent, about 3 minutes. Set aside. Preheat oven to 450°. Using your fingers, poke holes straight down into the risen dough. Spread cooked onion mixture evenly over top and sprinkle with remaining 1/2 tsp. salt.
